Aperitif (to stimulate digestion)—made with apricot and fennel, effervescent and vinegary

Seaweed sourdough, ciccioli, pickled fennel stems

Sweet potatoes, bagna cauda, parsley

cavatelli, spicy pork belly ragu

Lamb ribs, fig preserves, yogurt sauce, pickled mustard seeds

Red wine, recommended to pair well with the lamb
